4 tbsp | brown sugar |
1 tbsp | freshly grated ginger |
1 tin | mango pulp |
2 | oranges |
1 | lime |
1/4 tsp | ground cardamom |
1/2 tsp | ground cinnamon |
1 tsp | vanilla extract |
8 tsp | cornstarch |
250ml | coconut cream |
1 tsp | rose water |
100ml | whipping cream |
1. Mix brown sugar and ginger with 100ml water and boil it until it has reduced by half.
2. Juice oranges and lime, and add it to the sugar sirup, along with the mango pulp.
3. Allow to simer for 5-10 minutes, then add in the spices.
4. Dissolve cornstarch in coconut cream and add it to the pot. Bring to the boil while whisking. Turn of the heat when it starts to thicken.
5. Mix in the rose water.
6. Whip cream until it forms stiff peaks.
7. Fold whipped cream into the mixture and refrigerate.
