Yogurt mousse

3 gelatine leaves
1 tsp vanilla extract
300g plain yogurt
3 tbsp lemon juice
90g icing sugar
2 tbsp orange juice
100g whipping cream

1. Let gelatine bloom in a bowl of cold water.
2. Mix vanilla extract, yogurt, lemon juice and icing sugar.
3. Mix butter, sugar and vanilla extract until creamy, then mix in the eggs.
4. Heat up orange juice and stir in gelatine leaves until they have dissolved. Mix it into the yogurt.
5. Add the dry ingredients and mix until just incorporated.
6. Whip cream until it forms stiff peaks.
7. Fold whipped cream into the yogurt mixture and refrigerate for at least one hour.
